Easy as Apple Pie Home Fries


For perfect home fry wedges, I use an apple corer to cut the potatoes. The cut wedges are all the same size, so they cook evenly and come out each just as crispy as the others.

Next, all the wedges go into my big mixing bowl with a tablespoon or so of oil and whatever seasoning I am using, I put a plate over the top of the bowl and shake until all are evenly coated. I place all the slices, including the "core" pieces, on a cookie sheet sprayed in oil spray. and Roast at 425 until golden and cooked to a perfect crispness...about 20 minutes or so, depending on how you like your fries.
