Caring for Baking Stones

When I first started using baking stones some time ago, i wanted to learn as much as I could about caring for them...My first one was quite pricey and I wanted to be sure to make it last. After a bit of research I found this post online more recently and it is the best I have found yet...concise and full of great info. http://www.seedsofknowledge.com/stoneware.html
I printed it out and pasted it into my personal cook book binder so I would have it handy.

Last winter my Mom gave me her old clay "cooker". Its a dutch oven, essentially, that you have to soak in water before baking in. I remember her using it when I was a kid at home, and it always made THE BEST, juiciest chicken you'd ever want to eat. This is to be treated the same way as baking stones. I definitely want to take good care of it!

Thought I'd share with all of you about caring for you baking stones...there is some really good information at that link. For more great tips, go to http://tammysrecipes.com/

we had to throw away one of our baking stones because it had, after years of use, a nasty odor that affected the taste of our food. Baking soda didn't help, and I never used soap on it. Fortunately we still have another stone. Unfortunately it's my least favorite because the surface reminds me of fingernails on a chalkboard. I'm not sure what we should/could have done to save the other one.

According to what I have read, the stones can go "rancid" after some time. It seems to vary by brand of stone and from what I can gather, the more costly red clay stones last longer...I have a white one that is aquiring a nice brown patina from use. I also have a rectangular baking sheet style stone that I have not used much. It is also whit and is from "pampered chef" I recieved both my current stones as gifts.
